The Origin

Durum wheat of the Senatore Cappelli or Cappelli variety is the first wheat variety selected back in the early 1900s by the “wheat wizard” Nazareno Strampelli, from the Tunisian grain population Jeahn Rhetifah.

It is named in honor of Abruzzo senator Raffaele Cappelli, promoter of agrarian reform, who had extended the cultivation of wheat to areas not suited to it, to meet the needs of self-sufficiency.

Caractheristics of the Ancient Grain Senatore Cappelli

Cappelli is a durum wheat that boasts a good amount of protein (12-15%), but its main characteristic is that it is richer in polyphenols and flavonols (including coumarins, phenolic acids, anthocyanins, flavones, isoflavones, proanthocyanidins, stilbenes and lignans) than modern varieties, with which numerous health benefits are associated due to their anti-cancer, anti-inflammatory, antioxidant and antiviral power.

Cappelli durum wheat has two free phenolic compounds that characterize it, vanillin and pinosylvin; there is also inochinin, which is found only in ancient wheat varieties, and two pinoresorcinol derivatives that are lignans endowed with phytoestrogenic and antitumor activities.

Among vitamins, B vitamins are the most represented, while minerals include zinc, potassium, and magnesium.
