A rare Tuscan whisper, almost forgotten

Olivo Bianco is one of Tuscany’s most elusive and little-documented olive cultivars—a variety that survives more through oral tradition and local memory than through official agronomic manuals. Its name, “Bianco”, does not refer to the colour of the oil, but to the unusually pale appearance of the fruit and foliage, which stand out softly against the darker greens of traditional Tuscan groves.

Historically, Olivo Bianco was cultivated in small, mixed orchards, often close to farmhouses rather than in large commercial plantings. It was never a variety for volume or efficiency. Instead, it belonged to a domestic, almost intimate agricultural culture, where olives were pressed for family use and for local exchange. As Tuscan olive growing moved toward more productive cultivars, Olivo Bianco slowly disappeared, surviving only in isolated, old trees preserved by farmers who valued diversity over yield.

SUGGESTED MATCHING FOOD

This is an extra virgin olive oil designed to elevate rather than dominate—ideal for dishes where purity, texture, and finesse matter most. It is particularly suited to raw fish and seafood, delicate vegetables, white meats, fresh cheeses, and simple Mediterranean preparations, where each ingredient is allowed to speak.
