Obtained from the encounter of an excellent cooked must, produced with the traditional direct fire and open sky method, with an equally excellent high density Balsamic Vinegar of Modena, it stands out in front of the other creams for its organoleptic qualities.
Obtained solely from selected red grapes like Lambrusco or Sangiovese grown in Italy with organic and biodynamic methods.
No dyes, preservatives or other alien substances are added, naturally gluten free.
This Balsamic Glaze of Modena IGP is the result of a premium quality small batch, entirely derived from a selection of Italian grapes from organic and biodynamic agriculture in a long refining 220 litres oak wooden barrels.
The main ingredients of this Biodynamic Organic Balsamic Glaze of Modena IGP are the result of a small batch of very high quality grapes from our farm in the province of Modena.
It is also unique because it does not contain any preservatives or colouring, and the thickener is a biological starch that makes it creamy without any intolerance problems.

¨Our history begins with our grandparents Arduino and Zina. After many years working in the lower Modenese countryside, they purchased with their lifesavings a cottage surrounded by a vineyard. In the 1970s, their son Felice and his wife Iride converted the vineyard to organic and biodynamic. This was considered madness at the time; however, their profound respect for nature helped them overcome all challenges.
The beginning of the Demeter farming
At the beginning of the 1980s, our farm followed German biodynamic policies. Italy had yet to distribute organic certification, so our certification was granted by a Germany controlling body (Demeter). In the same years, we began to produce traditional balsamic vinegar from Modena. Nowadays, our vinegar company is the only one in world to be certified organic and biodynamic. This is perhaps one of our greatest prides.¨.
