According to Demeter biodynamic standards, red wines may contain a maximum of 70 mg/L of sulfites, must not undergo sterile filtration, and are typically aged in a combination of concrete vats, large oak casks, and bottles.

Origin of the Grape Variety
The origins of Trebbiano are very ancient. Andrea Bracci (1595) referred to the Roman Trebulano wine from Trebula (today Treglia, Campania), while Sante Lacerna, Pope Paul III’s sommelier (1549), described Trebbiano as “delicate to drink, golden, gently fragrant, pleasant, not sweet, not aggressive,” much appreciated by the Pope in autumn. Latin writers such as Pliny used Trebulans to indicate local farmhouse wines. It is a highly adaptable grape with remarkable productivity, found across Italy under names linked to their regions — Abruzzese, Toscano, Romagnolo, Modenese, Spoletino, Soave. Trebbiano grapes, in particular, yields wines with a light golden color and greenish highlights, a fresh vinous aroma, moderate acidity, and a dry, harmonious taste.
