For me, wine appreciation is not about memorising regions, vintages or complicated terminology. It is about discovering what you genuinely enjoy and feeling confident when choosing a bottle.
I created this wine appreciation in Sydney for people who enjoy wine but would like to understand it more clearly. You do not need any previous knowledge—only curiosity and a willingness to taste.
Hosted inside our intimate Bottega 1900 wine cellar in Brookvale, each course is limited to only 12 guests, allowing us to taste, compare, ask questions and enjoy a genuine conversation about wine.
Why I Created This Course
After many years working as a sommelier in leading restaurants, I noticed the same uncertainty again and again. Guests would open a wine list and hesitate. They enjoyed wine, but they were unsure where to begin, what to order or how to explain what they liked.
That experience shaped the way I approach wine today. I do not believe you need hundreds of facts or technical expressions to appreciate wine. You need the right information, explained clearly, and the opportunity to compare different wines in the glass.
During this wine appreciation course, I will guide you through a carefully selected line-up and help you recognise why one wine feels lighter and fresher, while another is fuller, smoother or more structured.
What We Will Explore Together
During this wine appreciation course in Sydney, we will explore:
- How to taste wine and recognise its main characteristics
- The differences between acidity, tannin, body, sweetness and alcohol
- How grape varieties, climate and winemaking influence wine style
- How to compare wines and identify your personal preferences
- How to approach a restaurant wine list with greater confidence
- How to explain what you enjoy to a sommelier or wine merchant
- How to choose wine for different foods and occasions
My goal is not for you to memorise everything. I want wine to begin making sense.
By the end of the experience, you should feel more comfortable expressing what you like, asking the right questions and trusting your own palate.

With only 12 guests, everyone has the opportunity to participate, ask questions and share their impressions.
There are no wrong answers and no pressure to use professional tasting language. What matters is how the wine feels to you. I will help you understand what creates that sensation and find simple words to describe it.
